nice man, i'll preempt your recipe with mine:
cooked & shredded fresh chicken breast with mayonnaise, finely diced onions and celery, little bit of dijon mustard, small splash of apple cider vinegar, pinch of rosemary and salt&pepper to taste
and the prosciutto/cantaloupe was learned at a deli i worked at years back

Here's my super special recipe for Filipino adobo:
1/4-1/2 kilo bone-in chicken 1/4-1/2 kilo pork (I use the belly but if you can't tolerate the texture of animal fat then just use a leaner cut) 1/2 cup soy sauce (adjust according to taste) 1/4 cup vinegar (can also be adjusted) One head of garlic, peeled and smashed (if you don't like garlic then use less idk) One small red onion Two dried bay leaves, torn up (you can use fresh if its all you have for some reason) A teaspoon of peppercorn A tbsp of muscovado sugar (you can use brown. can also be adjusted) 1-2 cups of water (to tone down the saltiness)
Put all the ingredients in a pot. Bring to a boil. Once its boiling lower the heat to a simmer. Let it simmer for 20-30 minutes. If you want a creamy adobo replace half the water with coconut milk. But ONLY ADD IT DURING THE LAST 5 MINUTES if you cook it for too long the milk will separate, resulting in an oily mess.

Yes I cook adobo with just the chicken a lot of times. Idk about the onion though. Never tried cooking it without the onion but I don't think the dish will be ruined w/o it.

Also the chicken is perfectly cooked all the time. I guess you can simmer it for a little bit longer just to be sure. EDIT: some people like to fry and brown the meat first I guess you can do that.

One trick I use is to mix the sugar, water, soy sauce and vinegar first and taste it then adjust it accordingly before putting in the meat and the spices / flavorings. This is to make sure it's perfect to.my taste and not too salty/sour/bland.

nice man, i'll preempt your recipe with mine: cooked & shredded fresh chicken breast with mayonnaise, finely diced onions and celery, little bit of dijon mustard, small splash of apple cider vinegar, pinch of rosemary and salt&pepper to taste and the prosciutto/cantaloupe was learned at a deli i worked at years back welp I billy-goatin' lost my recipe which kinda bums me out cause I had it down to a science, but I remember I think. 2 cups of chicken (just use two leg quarters since they're dirt cheap, I like to cut the skin off, season it with salt, pepper and a little basil and bake it. wait til it cools and tear it apart ect) 5 slices of bacon (crumble them in the mix obviously) 2 medium sized ribs of celery, chopped little more than 1/2 cup I think of chopped grapes. I chop them into fourths because I am an obsessive maniac 1/2 cup of mayonnaise and like two tablespoons of really finely minced onion when you mix all this shit in, put a couple splashes of worcestershire sauce and lemon juice in there and some salt and pepper to taste.

very nice, sounds tasty. bacon's a nice touch, if i didn't have such debilitating digestive issues that'd be integrated into my next chicken salad
and A+ on the chopped grapes, i forgot how good that is in chicken salad. chopped walnuts or pine nuts also go well if you're adding the grapes. also, i forgot a crucial spice in my recipe: dill, which singlehandedly makes any chicken salad go from good to awesome

that sucks cause the bacon/worcestershire combo really makes it. also I've heard about people putting dill in their chicken salad but never woulda thought about rosemary. I always shy away from dill though because ive never cooked with it and I know how strong it can be.
