incoming tldr
Matsumoto (and Hamada) are the coolest comedians
A lot of their humor is so META that they tickle my brain in a funny way, examples:
There is a common type of Japanese comedy (manzai) that is basically a modern version of "the straight man" and "the funny man" and I don't often like them because they're so staged and traditional. Matsumoto/Hamada puts a twist on this tradition by swapping the roles they usually play.
In Japanese language they always speak differently to strangers than they do to their friends. Matsumoto/Hamada sort of make fun of this custom by inviting two other guys to be their friends. They have to always speak to Matsumoto/Hamada as if they were friends, if they don't they get smacked in the face. (It's hard because the instinct is so ingrained)
Also they get pissed at stupid anime/manga stuff. Surprise! Not everyone in Japan likes these things!
They also participate in a 'World News' show, with three foreigners (they never actually speak; someone else speaks Japanese and they mime it) presenting the world news. Everything they say is bullshit and Matsumoto/Hamada often try to call them out on it. Also it's a late show so they use stronger language than usual i.e. "I'm getting pissed at how shitty their jokes are".

If that's too meta for you here's a good simple one, it's like Simon Says but with dance moves
