the difficulty of every single enemy and the constant need to be 100% focused, I just don't find it enjoyable to be on edge the whole time I play a game and to feel like I need to be performing every single sword slash perfectly otherwise "haha billy-goat you this little weeny skeleton guy killed you"

yeah then the game may just not be for you.
as you get later in the game and upgrade your health and endurance you become a lot more durable provided you wear some beefy armor, but the game still takes focus.
It's a lot like a modern version of Punch-Out. The game is all about timing your attacks so that you can not just avoid damage by not making mistakes but also punish your enemies mistakes. Especially in the early game, you have to learn how the enemies fight before you can get really aggressive. Once you now HOW they fight though you can generally get through an area pretty quickly.
It doesn't take the exact precision you say, in that few of the early enemies are anything like one hit kills so you have room to make mistakes, but you definitely can't play too sloppily.

i played dragons dogma a lot and that is a 3rd person medieval game w/ sword and magic that was very fun to do and play

Also, if you're playing on PC make sure you use DSfix. It lets you unlock the framerate since by default it's locked to 720p. Here's an example of the visual difference you'll get. Also because I make gifs all the time, check out this dope gif i made from the first tutorial boss i bought DS on PC and used that mod cheers mate it looks way better than xbox

summoning solaire makes the fight a total cake walk.
i remember when i first faced O&S i summoned solaire and it was wicked easy. everyone complained about how they were so tough and I was just sitting there thinking "bawww wasn't that bad". i recently tried to solo them, killing Smough first and then ornstein and it was pretty billy-goatin tough!
